Shrimp Fatteh
Ingredients
Ingredients:
– 2 small pita breads, cut into bite size squares
– 3 cups @dairiday Laban
– 1/2 cup tahini
– Juice of 1 lemon
– 3 garlic cloves, crushed
– Salt, to taste
– 400g Raw Shrimp, thawed and patted dry
– 3 tbsps Olive Oil
– 2 tsps paprika
– Mixed raw kernels ( almonds, cashews, pine nuts)
– 1 tbsp Ghee, you can use vegetable oil but ghee is more flavorful
Method:
– Cut the bread into pieces and fry on medium heat until golden. Remove and set aside.
– In a bowl, mix together Laban, tahini , garlic, lemon juice and salt. Set aside.
– In a pan heat 3 tbsps of olive oil over high heat.
– Add in the shrimp and paprika. Cook for 2-3 minutes tossing around frequently until well mixed and cooked through.
– In another pan, melt the ghee and add your raw kernels.
– Fry until golden, around 2-3 minutes.
– Assemble the dish by adding the fried bread to the bottom of your dish, top with the laban mixture then add the shrimp. Garnish with fried kernels and chopped parsley.
– Serve immediately! This dish can’t be made in advance!!
