Chicken Avocado Salad
Ingredients
Chicken salad with an avocado dressing:
Ingredients
For the Salad:
• Lettuce, shredded
• Red and yellow bell peppers, diced
• Tomatoes, diced
• Cucumbers, diced
• Red onion, finely sliced
For the Chicken:
• 300g chicken breast, diced
• Olive oil
• Salt, pepper, paprika, garlic powder
For the Dressing:
• 1/2 avocado
• 3 tbsp @dairiday laban (yogurt)
• 1 tsp Dijon mustard
• Juice of half a lemon
• Salt and pepper
• Water, to adjust consistency
Instructions
1. Prepare the Chicken:
• Season the diced chicken breast with salt, pepper, paprika, and garlic powder.
• Heat a pan over medium heat and add a splash of olive oil.
• Cook the chicken pieces until they are golden brown and cooked through, about 6-8 minutes. Set aside to cool.
2. Make the Dressing:
• In a blender or food processor, combine the avocado, laban, Dijon mustard, lemon juice, salt, and pepper.
• Blend until smooth, adding water a little at a time until you reach your desired consistency.
3. Assemble the Salad:
• In a large bowl, combine the shredded lettuce, diced bell peppers, tomatoes, cucumbers, and finely sliced red onion.
• Add the cooled, cooked chicken pieces.
• Pour the avocado dressing over the salad and toss to combine.
4. Serve:
• Serve immediately or chill for a few minutes to let the flavors meld together.

Shrimp Fatteh
Ingredients
Ingredients:
– 2 small pita breads, cut into bite size squares
– 3 cups @dairiday Laban
– 1/2 cup tahini
– Juice of 1 lemon
– 3 garlic cloves, crushed
– Salt, to taste
– 400g Raw Shrimp, thawed and patted dry
– 3 tbsps Olive Oil
– 2 tsps paprika
– Mixed raw kernels ( almonds, cashews, pine nuts)
– 1 tbsp Ghee, you can use vegetable oil but ghee is more flavorful
Method:
– Cut the bread into pieces and fry on medium heat until golden. Remove and set aside.
– In a bowl, mix together Laban, tahini , garlic, lemon juice and salt. Set aside.
– In a pan heat 3 tbsps of olive oil over high heat.
– Add in the shrimp and paprika. Cook for 2-3 minutes tossing around frequently until well mixed and cooked through.
– In another pan, melt the ghee and add your raw kernels.
– Fry until golden, around 2-3 minutes.
– Assemble the dish by adding the fried bread to the bottom of your dish, top with the laban mixture then add the shrimp. Garnish with fried kernels and chopped parsley.
– Serve immediately! This dish can’t be made in advance!!
